Judged the Best Steak Restaurant in London by customers of Bookatable, Europe’s biggest online restaurant booking service the 150 seat Heliot Steak House has some of the most interesting views of any restaurant in London. Overlooking the main casino gaming floor at The Hippodrome, The Steak House has evolved to become a prime pre and post theatre destination and continues to gain recognition and awards for its unique offering and quality of food.
What Was Required
The chef team were spending a vast majority of their time dealing with issues that were caused by poor staff reliability and a lack of consistency in the kitchen support team. They were looking for guidance and support from an external party who could rebuild and reform the kitchen support team to allow the chefs more time to prepare and create dishes to sell.
It was quickly identified by CleanEvent Services that the service being provided to The Heliot Steak House was suffering from a lack of ownership at site level, and this was contributing to staff motivation levels and staff retention.
Based on CleanEvent Services successful delivery of cleaning and back of house operations at venues including Wembley Stadium, a plan was put in place with a fully empowered ‘working’ management structure. This type of approach utilises kitchen downtime to undertake planning, administration, staff development activities led by a working site manager, and has delivered a driven, well led and motivated team of kitchen support staff.
Challenges & Results
The team members had to work to develop themselves into a cohesive unit that fully supported the objectives of the senior food and beverage team, as well as Executive Chef Ioannis Grammenos. Since implementation of the plan, the team have been more consistent in their approach and issues with attendance and punctuality have been removed.
